Kitty’s Corner: Thoughts, Opinions, & Musings of Kitty’s

I apologize that I’ve not done a newsletter for a bit.  In the last couple of months, there have been so many changes required by the State that it’s been difficult to keep up, and my Dad unfortunately passed away during that time as well.  Always know, however, that any updated information appears on our website.

I’ve had clients recently come in who’ve mentioned they need to be touched.  Touch is always essential, and yet it is one of the primary things that we’ve been made to feel we can’t do during this pandemic.  We need to balance Covid-19 requirements though with common sense and science, meaning that we can’t give up what common sense and what science show keeps us healthy in order to avoid becoming unhealthy.

Dacher Keltner, Director of Greater Good Science Center at UC Berkeley University states that “a wave of studies has documented some incredible emotional and physical health benefits that come from touch. […T]ouch is truly fundamental to human communication, bonding, and health. […]. The science of touch convincingly suggests that we’re wired to—we need to—connect with other people on a basic physical level. To deny that is to deprive ourselves of some of life’s greatest joys and deepest comforts.”  He states that touch is our “primary language of compassion, and a primary means for spreading compassion.”

So if the world feels a bit hard right now, go touch someone you love and spread compassion.  You can still stay within health guidelines by washing your hands afterward.

Dr. Stefanie Mikulics

Dr. Mikulics’ Corner

I have been in private practice for nearly 20 years and have been blessed with the opportunity to offer wellness exams, gyn care and cosmedic medicine treatments.  I am very excited to offer the best of rejuvenating treatments at The Spa while supporting you in your health, beauty and wellness from the inside out.

One of the cosmedic treatments I offer is the Tempsure Envi.  It’s a noninvasive radiofrequency treatment that can minimize fine lines and wrinkles, tighten skin, and improve the appearance of cellulite. The device uses radio frequency waves to deliver heat deep into your skin, triggering collagen production that results in more firmness and fewer wrinkles. It’s safe for all skin tones, and there’s no down time.

It works best as a series of treatments. Every patient will have a personalized schedule, but you can expect to need at least four Tempsure Envi sessions, two to four weeks apart. Treatments can last anywhere from 10 minutes to an hour, depending on the size of the area.

During your treatment, you’ll feel warmth but no pain as I direct the handpiece over your skin. Similar devices have existed for years, but Tempsure Envi is the only device of its kind to emit radiofrequency that stimulates the nerves so minimally, allowing providers to use a higher temperature and faster results without pain.

Health, Happiness and Many Blessings,

Stefanie Mikulics, MD

Along Comes Hope

Along Comes Hope Success Story

Rochel was a Senior at Paso Robles High School when she was diagnosed with leukemia at 17 years old. Her aunt and uncle moved her here from the Philippines without her parents to work at their elder care home five months before her diagnosis.  She was referred to Along Comes Hope through her physician, as she was not getting support, healthy foods or consistent rides to her lifesaving treatments and doctor appointments. Rochel would not have survived without having these intense chemotherapy treatments and many appointments.

The team at Along Comes Hope jumped into action and became a part of Rochel’s healing journey. They helped her with transportation support from Paso Robles to Stanford Hospital chemotherapy, as well as her local doctors in San Luis Obispo.  They also helped her with some healthy food and emotional support. She had never worn a dress or gone to a dance, but wanted so badly to go to her Senior year high school prom.  Along Comes Hope made that happen.  Their team found a gown for her, a beautiful wig donated from Hearst Cancer Resource Center, and bought her prom tickets. Their CEO went to Rochel’s home to do her makeup and hair.

When Rochel looked in the mirror, she said, “I feel like a Princess!” One of their amazing male Cal Poly volunteers showed up with flowers to escort her to the prom for a wonderful night of memories, dancing and laughter.

The photo below displays the gifts of life that Rochel was blessed with after healing from cancer.  She was told she would likely never be able to have a baby due to the intense and aggressive chemotherapy she’d endured. But this Princess found her Prince and is now married with two beautiful children. If Rochel wasn’t given a chance to fight cancer, so many lives would have been impacted.  No family should have to choose between affordability or survivability. Along Comes Hope is here to help make sure every child gets a chance to fight this disease.

Minted Spinach Soup

Minted Spinach Soup

3 carrots
13.4 oz chickpeas
2 tsp ras el hanout spice
1 onion
1 oz fresh ginger
½ oz fresh mint
8 oz baby spinach
2 tsp vegetable broth concentrate
¼ cup Forager® Project Cashewgurt®
1 tbsp vegetable oil
2 tbsp + 1 tsp olive oil
Salt and pepper

1. Roast the vegetables
Preheat the oven to 400°F. Peel and dice the carrots. Drain and rinse the chickpeas and pat dry with a kitchen towel. Add the diced carrots and just half the chickpeas to a baking sheet and toss with 1 tbsp vegetable oil, ras el hanout, and a pinch of salt. Roast until the carrots are tender and the chickpeas are crispy, 15 to 18 minutes.

2. Prepare the aromatics
Peel and dice the onion. Peel and mince 1 tbsp of ginger. Pick the mint leaves.

3. Start the minted spinach soup
Heat 2 tbsp olive oil in a large pot over medium-high heat. Add the diced onion, minced ginger, and a pinch of salt. Cook until the onions have softened, 3 to 5 minutes. Add the remaining chickpeas, spinach, vegetable broth concentrate, all but a few of the mint leaves, 1¼ cups water, and 1 tsp salt. Bring the soup to a boil, reduce heat to low, and cook until the greens have wilted, 4 to 5 minutes.

4. Blend the minted spinach soup
Carefully transfer the minted spinach soup to a blender. Blend until smooth. Taste, and add salt and pepper as necessary.

5. Serve
Divide the minted spinach soup between bowls. Dollop with Cashewgurt. Top with the ras el hanout, carrots and crispy chickpeas, and the remaining mint leaves. Enjoy!
